Château
de Panisse

Château de Panisse is located in Provence—an olive-growing land par excellence. A region of light, sun, and clear skies, where the Mistral wind blows and the cicadas sing; an enchanting home for our family since 2007.


In the 1930s, eminent guests visited the château, inluding Antoine de Saint-Exupéry, Mermoz, Giono, and Pagnol— who even named one of his famous characters Panisse.


The towers of the 15th-century château overlook 15 hectares of olive groves on a unique terroir, a fertile soil rich in silt.


We cultivate 4 typical Provencal varieties: Aglandau, Verdale, Bouteillan, and Salonenque, all thriving in a spacious, airy plantation.

Strict guidelines certify our olive farm as both Fruité Vert and Noir d’Olives Maturées, qualify for the prestigious protected designation of origin: Appellation d’origine Provence. Both oils are an exquisite blend of our 4 olive varieties. We harvest by hand at the very start of the
season and take the olives immediately to the mill.


While Fruité Vert is cold-pressed within 8 to 16 hours, Noir d’Olive undergoes a traditional Provencal process, stored in oxygen-free containers for light fermentation before cold extraction.


Our olive oils are carefully stored in stainless steel tanks in the château’s cellar. They are bottled on-site as orders come in, ensuring optimal taste and organoleptic qualities.

The two beautiful towers of the old 15th-century castle overlook the 15 hectares of olive groves that surround it. In the thirties, Antoine de Saint-Exupéry, Mermoz, Giono and Pagnol would frequent the castle, the latter using the name Panisse for one of his famous characters.…

The soil on which the olive trees grow, their airy implantation and the nature of the varieties of olives they produce qualify the olive oils Fruité Vert and Noir d'Olives Maturées as protected designation of origin "Appellation Huile d'Olive de Provence Protégée".

The orchard is made up of 4 local varieties of olives: aglandau, verdale, bouteillan & salonenque. Panisse Noir d'olives maturées is a blend of the same olives as Fruité Vert, and is also harvested at the very beginning of the season. It owes its distinctive taste of black olives, truffles and undergrowth to a process of controlled fermentation for a few days before crushing.


The olives are harvested by hand at the start of the season. They are then taken without delay to the Mill, where they are cold-pressed.


The oils are then carefully preserved in stainless steel tanks with floating caps in the Château's cellar. They are bottled on the estate as orders come in, to ensure that their taste and organoleptic qualities are optimally preserved.
